Zinacantan mezcal

Founded in 2019, Zinacantan maestra mezcalera Fabiola Torres Monfil and Co-Founder Diana Pinzon, an ecologist define Zinacantan as an agroforestry project first and a mezcal brand second. Committed to strictly seasonal production and regenerative agriculture, Zinacantan is committed to producing mezcal as responsibly as they can. While maintaining an eye to the future, they are also invested in reviving the traditions of Fabi’s father and grandfather with plans to build a wooden still and utilize cowhide fermentation for small production special releases. Everything produced by Zinacantan is grown from seed, fermented with wild yeasts, and distilled to proof in a single distillation run WITH THE EXCEPTION OF A FEW SPECIAL RELEASES.

Leveraging Fabiola’s familiarity with her family’s local ecosystem, and Diana’s background in natural resource management, the pair have created what is arguably the most ecologically mindful and equitable project in the industry. if everyone utilized a similar approach, it could revolutionize the future of agave spirits.

  • Zinacantan Espadilla

    One of the last few wild varieties of Agave Angustifolia, these small batches of less than 500 liters are only distilled once.

    Single-distilled Papalometl is produced from Agave Potatorum, wild-harvested from the Sierra Mixteca Poblana.

    A very limited annual production, this batch of pechuga was produced using agave potatorum and limited to 83 liters. This special edition incorporates wild turkey rubbed with mole Poblano created by Faby’s family.

    Known as Tepeztate in other regions of Mexico, this batch of Agave Marmorata was sourced from dear friend Don Juan in the nearby municipality of Molcaxac, which means Sparrows’ Nest.

    This extremely limited release of Papalometl was fermented in cowhide as part of Fabiola’s effort to revive the production methods of her grandfather. This limited release was done in two batches of 80 and 60 liters.

  • Zinacantan Papalometl with Frutos Rojos

    A beautiful expression of Papalometl distilled with native Eugena fruit (clove family). The small red fruits are added to the second distillation and impart a pronounced, yet balanced profile with notes of mint and juniper. This limited edition is only available in 200 ml.

  • Zinacantan Papalometl With Vanilla

    This limited release of wild Papalometl was a collaboration with a female-owned agricultural co-op in the state of Veracruz. This co-op is dedicated to re-establishing the native population of vanilla in the region. This limited edition is only available in 200 ml.
