FaneKantsini is produced by the Maestros Mezcaleros Tres Colibrí cooperative, an association of eight producers in the Highland Chontal and Sola de Vega regions of Oaxaca. it was founded in 2012 by mezcalera Sósima Olivera Aguilar.
Originally from San Miguel Suchixtepec in the Chontal region of Southeast Oaxaca, Sósima comes from a line of mezcaleros and recalls making mezcalas as a small child with her father and grandmother. She founded the cooperative after reflecting on the church groups in the region organizing cooperatives to help sustain their local communities. The co-op functions to help diffuse costs, work, and risks among a number of producers while sharing in the profits.
“The cooperative system is something that goes further than benefitting the individual. I thought how do we continue forming this in the pueblos, this communal work that at the end of the day is how you make mezcal anyway?” - Sósima Olivera Aguilar in a July 2020 interview with @mezcalistas
Working in two different locations, FaneKantsini focuses on producing very small batch runs from responsibly harvested endemic agave. Sósima speaks of maintaining the tradition of her father, who would plant 20 agave for every 10 he harvested. Mezcal produced in Sósima's hometown of San Miguel Suchiltepec is distilled in copper alembic stills, while mezcal from San Francisco Sola de Vega is distilled IN CLAY POTS, WHICH IS THE traditional style of the region.
